The Origin Story
The Beginning of a Dream
The Santa Sabia distillery was founded in 2013 by Juan Carlos Gonzalez - an astute businessman from Mexico. He is more commonly known as the “Fisher of Dreams,” - a nickname based on his ambitious mindset and strong connection with the earth. At the beginning of his journey, Juan was captivated by the feeling he got when he drank mezcal. Realizing it was unlike anything he had tasted before, he began researching different agave varieties and began leading mezcal tasting sessions to understand what people enjoyed and why. He soon teamed up with master mezcalero IsaĂas MartĂnez. Juan’s enthusiasm and IsaĂas’s wisdom combined perfectly and became the ideal base to set up their own distillery.
Learning from a master
Juan’s quest for information brought him into contact with master mezcalero IsaĂas MartĂnez. While he studied the ecosystems, species, and various quirks of his ancestral plants, IsaĂas allowed him to put his theoretical knowledge into practice. Taking him under his wing as an apprentice, IsaĂas taught Juan everything he knew about mezcal production. When he first got involved, Juan had simply thought of the mezcal trade as a smart investment, but today, he is continually amazed at how drastically it has changed the course of his life and his entire outlook on it.
Spreading a sustainable message
Along with the creation of beautifully distilled mezcals and tequilas, Juan puts a lot of effort into teaching people about sustainability and agave conservation. His love affair with agaves has sparked the interest of many local people, who work with the “Fisher of Dreams” to help rescue the native agave. Santa Sabia’s goal is to replant more than 29 hectares of different wild agave species per year.

He wants to show that each different agave variety has its own distinct personality, and that you can learn so much about your land by tasting its local ingredients.
