Negroni
Baldoria Rosso is the perfect base for a Negroni. Pour 25 ml gin, 25 ml Baldoria Rosso and 25 ml Campari into a mixing glass filled with ice, and stir until it’s chilled. Strain into a lowball glass filled with ice, and garnish with an orange twist. Hey, it’s the roaring twenties all over again!

Although the original idea for Baldoria was born in a Parisian speakeasy, the vermouths themselves are made in a little artisanal distillery in Boves, located in the Piedmont region of northwest Italy. The blue Alps that surround the distillery are home to all kinds of flora and fauna - and all of the botanicals that go into the vermouths are either gathered from the side of the mountains by local pickers, or grown in the distillery’s own herb garden.
A delicate process
Baldoria vermouths are produced in a collaborative effort between bartenders and distillers, who work together to perfect the recipes. After the ingredients have been selected and weighed, the genepy is extracted via alcohol suspension, retaining only the delicate perfume of the genepy flowers. The ingredients are then macerated, first in a hydroalcoholic bath, then in pure white Chardonnay wine.
Building up the flavour array
Baldoria Rosso is then blended with a white Chardonnay and red Nebbiolo wine and sugar base, before ageing, filtering, and bottling. Its gorgeously balanced flavour palate is made up from local botanicals - wormwood, genepy, clary sage, lavender, orange peel, thyme, and summer savory. The red wine gives it tannins and body, bolstering the light bitterness of the wormwood.
The Brains Behind It
A story of mixology
Baldoria is the brainchild of Tim, Dotan, and Daniel – better known as Ernest. Most of them work together at the world-famous Little Red Door, a mixology cocktail bar in the centre of Paris. Wanting to create luxury products for bartenders, they turned to Italian distillers Piero and Enrico to turn their dream into reality. The result is a range of luxurious, beautifully balanced contemporary vermouths - made by bartenders, for bartenders.
